Caramelized Tofu with Brussels Sprouts

Ingredients (2 servings):
  • A couple of splashes of peanut or olive oil,
  • a couple of pinches salt,
  • 250 g firm tofu (natural or flavoured), cut into ~8 mm thick slices,
  • 2 medium cloves garlic, minced,
  • 1/3 cup pecans (walnuts also good), toasted and chopped,
  • 3 tbsp fine-grain sugar,
  • 1/4 cup cilantro, chopped,
  • 250 g brussels sprouts, washed and cut into ~3 mm thick wide ribbons (for a different dish, substitute with scallions cut in ~1.5 cm pieces).
Algorithm:
  1. Heat up a wok with a splash of oil and a bit of salt, add tofu.
  2. Sauté until slightly golden, about 4 minutes.
  3. Add the garlic and nuts, and cook for another minute.
  4. Stir in sugar and cook for another couple of minutes until the caramel forms on the tofu and nuts.
  5. Remove from heat, stir in cilantro, and remove the tofu and nuts from the wok.
  6. Add another splash of oil and salt into the wok and increase the heat.
  7. When the pan is hot, stir in the brussels.
  8. Cook for 2--3 min, stirring a couple times (but not too often) until you get a few golden bits.
  9. Mix with tofu and eat with rice.
