Caramelized Tofu with Brussels Sprouts
Ingredients (2 servings):
- A couple of splashes of peanut or olive oil,
 
- a couple of pinches salt,
 
- 250 g firm tofu (natural or flavoured), cut into ~8 mm thick slices,
 
- 2 medium cloves garlic, minced,
 
- 1/3 cup pecans (walnuts also good), toasted and chopped, 
 
- 3 tbsp fine-grain sugar,
 
- 1/4 cup cilantro, chopped,
 
- 250 g brussels sprouts, washed and cut into ~3 mm thick wide ribbons (for a different dish, substitute with scallions cut in ~1.5 cm pieces).
 
Algorithm:
- Heat up a wok with a splash of oil and a bit of salt, add tofu.
 
- Sauté until slightly golden, about 4 minutes.
 
- Add the garlic and nuts, and cook for another minute.
 
- Stir in sugar and cook for another couple of minutes until the caramel forms on the tofu and nuts.
 
- Remove from heat, stir in cilantro, and remove the tofu and nuts from the wok.
 
- Add another splash of oil and salt into the wok and increase the heat.
 
- When the pan is hot, stir in the brussels.
 
- Cook for 2--3 min, stirring a couple times (but not too often) until you get a few golden bits.
 
- Mix with tofu and eat with rice.
