Coconut-banana Muffins

Ingredients (7 muffins):
  • dry ingredients:
    • 125 g wheat flour,
    • 50 g granulated sugar,
    • 12 g vanilla-scented sugar,
    • 1.25 tsp baking powder,
    • 40 g grated coconut,
    • a pinch of salt,
  • liquid ingredients:
    • 42 g melted butter,
    • 100 ml (~120 g) coconut milk,
    • 1 egg,
    • 2 tbsp lemon juice,
    • 1 banana.

Algorithm:
  1. Mix the dry ingredients in a bowl.
  2. Whisk the egg.
  3. Mix the egg with the butter and coconut milk.
  4. Mash the banana with a fork and mix it with the liquid ingredients.
  5. Mix the dry and liquid ingredients. The batter should be a little lumpy. Do not overmix!
  6. Put paper cups into muffin molds (I use silicon) and pour the batter inside (it should not be full).
  7. Bake in the oven on ~180 degress Celsius for ~20 minutes (I use Remoska for 28 minutes).
