Ingredients (900 g loaf of bread; for a 700 g loaf, use the measurements in [.]):
- 390 g [300 g] of sourdough from rye bread flour (about 50% water and 50 % flour), see the sourdough recipe,
- 390 g [300 g] of flour, several examples follow:
- 390 g wheat bread flour,
- 150 g wheat bread flour and 140 g wheat wholemeal flour,
- 50 g of rye wholemeal flour, 120 g what bread flour, 120 g wheat wholemeal flour,
- 180 ml [140 ml] water,
- 10 g [7 g] salt,
- 6 g [5 g] caraway seeds (50 % whole and 50 % ground),
- additional ingredients:
- sunflower seeds,
- poppy seeds,
- pieces of garlic,
- walnuts,
- cumin, ...
Algorithm:
- Put the sourdough into your bread maker.
- Put all the ingredients on top of the sourdough.
- Start the machine. Choose a sufficiently long program (the sourdough takes more time to rise than yeasts), I use a 3:50 hours long program.
