Stewed Carrot

Ingredients (serves 2):
  • 500 g carrots,
  • 1 onion,
  • a pinch of salt,
  • 1 tbsp olive oil,
  • 1/2 tsp ground corriander or caraway seeds,
  • 1/2 tsp rosemary,
  • ground black pepper,
  • 4 tbsp soy sauce,
  • 200 ml water.
  1. Cut the carrot into thin rounds, preferably using a food processor.
  2. Heat up the oil in a pan and add the onion and salt and stir fry.
  3. When the onion turns brown a little, add the carrot and stir fry for a while.
  4. Add the pepper, rosemary and corriander or caraway seeds, mix.
  5. Add the soy sauce, mix and stir fry for a while.
  6. Add the water, cover with a lid and let it stew for 15 minutes, until the water evaporates and the soy sauce creates a thin film on the carrot.
  7. Can be server with e.g. egg.
