- 2 cups sugar,
- 2 cups water,
- 2 cups fresh mint.
- Heat the sugar and water in a small pot and bring to boil.
- Chop the mint coarsely and put it into a larger heatproof pot or bowl (such that you can put a lid over it).
- When the sugar has disolved and the solution is boiling, pour it over the mint, cover with a lid and let steep until cold.
- Transfer to a bottle.
