Chocolate Panna Cotta

Ingredients (2 servings):
  • 50 g heavy cream,
  • 50 g milk,
  • 1/4 tsp vanilla extract,
  • 10 g powdered sugar,
  • 1 g agar powder,
  • 50 g bittersweet chocolate,
  • 1 egg yolk.
Algorithm:
  1. In a saucepan, whisk together heavy cream, milk, vanilla extract, sugar, and agar powder.
  2. Bring to simmer (not boil, just until small bubbles form on surface) and simmer for 1 minute.
  3. Remove from heat and add chocolate, stir briefly.
  4. After 1 minute, whisk in to thoroughly combine the egg.
  5. Pour the mixture into glasses, molds, or ramekins and let sit in a fridge for 15 minutes.
