Ingredients (2 servings):
- 50 g heavy cream,
- 50 g milk,
- 1/4 tsp vanilla extract,
- 10 g powdered sugar,
- 1 g agar powder,
- 50 g bittersweet chocolate,
- 1 egg yolk.
Algorithm:
- In a saucepan, whisk together heavy cream, milk, vanilla extract, sugar, and agar powder.
- Bring to simmer (not boil, just until small bubbles form on surface) and simmer for 1 minute.
- Remove from heat and add chocolate, stir briefly.
- After 1 minute, whisk in to thoroughly combine the egg.
- Pour the mixture into glasses, molds, or ramekins and let sit in a fridge for 15 minutes.

Ingredients (1 liter):
- 1150 ml water,
- 250 g sugar,
- 170 g raw ginger.
Algorithm:
- Optional (if you wish to reserve the candied ginger): peel the ginger.
- Slice the ginger into thin slices.
- Mix the ingredients in a pan and bring to simmer.
- Simmer uncovered for 30--40 minutes.
- Let cool and strain into a 1 liter bottle. Reserve the ginger if desired.
