- 2 cups packed mint leaves, stems removed, washed,
- 2 cups sugar,
- 1 cup water,
- juice of 2 limes.
- Place sugar and water in a medium saucepan over medium-high heat and stir until dissolved.
- Stir in the mint and the lime juice until combined.
- Simmer for 5--6 min.
- Let cool and strain into a glass jar, keeps for weeks.
