Roasted Hokkaido Squash

Ingredients (2 servings):
  • the squash:
    • 700 g Hokkaido squash, deseeded and cut into 1cm cubes,
    • 250 g beef or pork, cut into 1 cm cubes,
    • 4 cloves of garlic, smashed,
    • 6 tbsp vegetable oil,
    • salt, to taste,
    • fresh basil leaves,
    • pumpkin seeds,
  • the sour cream:
    • 200 g sour cream,
    • 3 cloves garlic, smashed,
    • fresh herbs,
    • salt.
Algorithm:
  1. Place the ingredients for the squash in a bigger bowl and mix until coated.
  2. Let marinate for 1 hour.
  3. Roast in a pre-heated oven (approx 200°C) for 40 minutes, until the squash is tender.
  4. Mix the ingredients for the sour cream and serve together.
