Roasted Hokkaido Squash
Ingredients (2 servings):
- the squash:
- 700 g Hokkaido squash, deseeded and cut into 1cm cubes,
- 250 g beef or pork, cut into 1 cm cubes,
- 4 cloves of garlic, smashed,
- 6 tbsp vegetable oil,
- salt, to taste,
- fresh basil leaves,
- pumpkin seeds,
- the sour cream:
- 200 g sour cream,
- 3 cloves garlic, smashed,
- fresh herbs,
- salt.
Algorithm:
- Place the ingredients for the squash in a bigger bowl and mix until coated.
- Let marinate for 1 hour.
- Roast in a pre-heated oven (approx 200°C) for 40 minutes, until the squash is tender.
- Mix the ingredients for the sour cream and serve together.
