Warm Balls in Cold Milk

Ingredients (2 servings):
  • 70 g fat tapioca pearls (prefer darker, do not go for the cheap ones!),
  • for the syrup:
    • 3 tbsp raw sugar,
    • 1.5 tbsp water,
  • 660 ml whole milk (try to get the best one), chilled in a fridge.
Algorithm:
  1. Bring 1/2 liter water to simmer in a pan.
  2. Add the pearls and simmer for 15 minutes.
  3. Meanwhile, heat the syrup ingredients in a small pan and start caramelizing.
  4. When the pearls have finished cooking, strain them and add them to the syrup.
  5. Let sit for a while.
  6. In a cup, add the pearls with syrup and pour over the cold milk.
  7. Serve with a fat straw.
