Warm Balls in Cold Milk
Ingredients (2 servings)
:
- 70 g fat tapioca pearls (prefer darker, do not go for the cheap ones!),
- for the syrup:
- 3 tbsp raw sugar,
- 1.5 tbsp water,
- 660 ml whole milk (try to get the best one), chilled in a fridge.
Algorithm:
- Bring 1/2 liter water to simmer in a pan.
- Add the pearls and simmer for 15 minutes.
- Meanwhile, heat the syrup ingredients in a small pan and start caramelizing.
- When the pearls have finished cooking, strain them and add them to the syrup.
- Let sit for a while.
- In a cup, add the pearls with syrup and pour over the cold milk.
- Serve with a fat straw.
