Cheesecake-Marbled Brownies

Ingredients:
  • Brownie batter:
    • 70 g butter,
    • 50 g bittersweet chocolate, chopped,
    • 140 g sugar (try less, last time it was quite sweet,
    • 1 egg + 1 egg white,
    • 1/3 tsp vanilla extract,
    • pinch of salt,
    • 70 g all-purpose flour,
  • Cheesecake batter:
    • 125 g Philadelphia cream cheese, well softened,
    • 60 g sugar,
    • 1 egg yolk,
    • 1/6 tsp vanilla extract,
  • Plus:
    • 30 g chocolate chips.
 Algorithm:
  1. Preheat the oven to 180°C and butter a 18.5 cm round springform pan.
  2. Make brownie batter:
    1. Heat chocolate and butter in a double boiler until just melted.
    2. Remove from heat and whisk in sugar, eggs, vanilla extract, and a pinch of salt.
    3. Whisk in flour until just combined and spread in the springform.
  3. Make cheesecake batter:
    1. Whisk together all ingredients in a small bowl until smooth.
    2. Spread over the brownie batter in the springform, then swirl with a knife or spatula to get the marbled effect.
  4. Sprinkle chocolate chips over.
  5. Bake for about 35 minutes (45 minutes in Remoska).
