Cheesecake-Marbled Brownies
Ingredients:
- Brownie batter:
- 70 g butter,
- 50 g bittersweet chocolate, chopped,
- 140 g sugar (try less, last time it was quite sweet,
- 1 egg + 1 egg white,
- 1/3 tsp vanilla extract,
- pinch of salt,
- 70 g all-purpose flour,
- Cheesecake batter:
- 125 g Philadelphia cream cheese, well softened,
- 60 g sugar,
- 1 egg yolk,
- 1/6 tsp vanilla extract,
- Plus:
Algorithm:
- Preheat the oven to 180°C and butter a 18.5 cm round springform pan.
- Make brownie batter:
- Heat chocolate and butter in a double boiler until just melted.
- Remove from heat and whisk in sugar, eggs, vanilla extract, and a pinch of salt.
- Whisk in flour until just combined and spread in the springform.
- Make cheesecake batter:
- Whisk together all ingredients in a small bowl until smooth.
- Spread over the brownie batter in the springform, then swirl with a knife or spatula to get the marbled effect.
- Sprinkle chocolate chips over.
- Bake for about 35 minutes (45 minutes in Remoska).
