Ginger Syrup

Ingredients (1 liter):
  • 1150 ml water,
  • 250 g sugar,
  • 170 g raw ginger.
  1. Optional (if you wish to reserve the candied ginger): peel the ginger.
  2. Slice the ginger into thin slices.
  3. Mix the ingredients in a pan and bring to simmer.
  4. Simmer uncovered for 30--40 minutes.
  5. Let cool and strain into a 1 liter bottle. Reserve the ginger if desired.
